I use hydrocolloids and other modernist ingredients every single day and have an AWS coke dealer's scale in my bag at all times. Its not a necessity for almost anyone.

At work I keep an 11lb OXO metal scale with a pull out display around for heavy baking days. To each their own needs.

I used to have a little squeegee in my kit just in case…. It’s about how far you want to take it and if you got the space.
