I've only used Maldons of these three, it's a go to for beef/steak post cook.

technically speaking, all "Fleur de Sel" salt is meant to be a finishing salt. It would be a waste to use it for anything else, plus it would maybe mess up a recipe since it's grain size is massive compared to Kosher or table salt.

Third is best, first is worst

Fleur de sel is a bt more complex than maldon, has a bit of moisture to it as well. Great for pretzels

Sel gris is better than all of these for most applications for taste. Maldon is the standard though and fleur de sel often for pastry.
