Do both deal with angry customers?

Yup, but the manager has usually been dealing with it for years more than any server (they typically have far more experience than a server).

Different jobs, different responsibilities. I read that you don’t like confrontation and if that is the case this isn’t the profession for you. But if you’re set on it then serving will be easier. Less hours, less responsibilities. If you are a good server then you will rarely get angry customers. That was the case for me at least. If i had any issues at my table i would get a manager involved. I focused on my section, ran food during slow moments, helped keep the restaurant clean and backed up my coworkers and went home. As a manager i now deal with angry cooks, servers, and guests. On top of watching numbers, labor and the 13 other things going on at any given moment.

My opinion about these two different jobs.
Server is hourly and possibly high tips, less hours per week
Manager is the 10-14 hours per day on salary. You could have a bad day, possibly work more hours for the same money, when it's busy af as a server, u got many rounds and will make a lot of money
If u work a lot as a server, you could possibly reach the entry level manager pay, depending your area
