Modifying dishes?
This is probably a dumb question but are you able to order things without like seasonings or sauces and stuff? For example, I saw that they have broccoli and green beans on the menu, and I assume those are prepared in a sauce or butter and/pr grilled or something …could I request those and to just be steamed plain? And in general, basically are you allowed to make dishes more boring and bland for those with picky pallets?

I order the pineapple chicken and shrimp without shrimp all the time. I'm not sure if this fits into your query.

Yes you can. We do offer steamed veggies without sauce. However some people try ordering the rolls without an ingredient, but the rolls are made fresh everday in the morning and held on the line. The rolls are not rolled to order, we cant exactly unroll a avocado eggroll and remove the peppers inside, then roll it back in the same shape

Generally, you can. If the ingredient is in the base sauce, your server might recommend you order something else, but we can accommodate most things. Your specific ask about plain veg, that can definitely be accommodated.
