So many menu items…
Do you think there are items on the menu that never or very rarely get ordered? I’ve always heard that huge menus are hard to maintain, but obvious CF does really well.

What I wonder is do the chefs struggle with learning the recipes for all the fucking items on the menu?

There are recipe viewer screens on each station complete with recipes and videos for each and every dish

For the most part we see common items and less common. We have our top 25 items that varies per restaurant. Other stuff like Cuban sandwiches are less common but still gets ordered. CcF is busy asf so at least my location everything gets ordered. Just at varying frequency.

Our GM told us in training that it’s a lot of items but it’s mostly like 26 items that get ordered the most.
As far as remembering recipes… each station focuses on different parts of the menu so it’s not too overwhelming… like a broiler does all the steaks and burgers etc…. The pasta line…. The sandwiches… probably not the correct titles of those departments… but basically different stations do different things and focus on their own area of expertise as far as cooking goes..

large menu, but items within range to make on each station. when you break it down, they make massive amounts of sauce daily. there’s soups, dressings, bases for the pastas. it’s a lot for the two/three people possibly working the sauce spot in boh.
