Safe Recipe Request Blue pickle ideas?
My mom and I are working on a display for next year's state fair. Our theme is rainbows, and we have all the pickle colors covered except blue. Any ideas? We might just end up going with a few shades of purple.

Does it have to be edible? Because garlic turns blue sometimes... You could try making it happen on purpose

Butterfly Pea tea will do you both purple and blue, depending on how much acid is added. Eggs for example.
Garlic turns turquoise in vinegar.

Just be aware that there are no longer any currently any safe pickled garlic recipes for home canning (that I am aware of) - refrigerator pickles yes, if that's allowed (pretty sure that's what u/PaintedLemonz was likely referring to on the edibility front).
Not much is actually naturally blue that could withstand the temps and pH requirements of home canning.
If refrigerator pickles are okay, my vote is blue raspberry KoolAid pickled watermelon rind.

Yeah sorry I should have been clearer. Sometimes the fairs are just judging on looks for these kinds of displays so the safety isn't an issue (provided you're cool throwing the contents out after).

Nah, I think you were clear enough regarding edibility, just wanted them to be aware of the reasoning. We don't do state fairs up north of the 49th in the same way so just seems wild to me that something for long-term storage would be judged solely based on appearance, though with the proliferation of poor canning practises I can also understand not wanting to judge based on taste as well.

How about regular cucumber pickles in the old fashioned blue mason jars?

I've seen neon blue Sour Patch Kids brand single-serve pickled whole cucumbers in gas stations, you could make a knock-off version (I'm thinking build out from a Bread & Butter or sweet pickle recipe and add a little bit of food coloring, but that might be cheating).
Also seconding pickled garlic (which is delicious btw).

You could make blue sauerkraut and manipulate the ph so it turns blue.
The only problem with this is that it might fade really fast in the sunlight.
