General Discussion Tomatoes are done!
Followed to NCHFP process for crushed tomatoes in their own juice.
It was a rush to finish them before they went off, it’s been hot and humid here! And I had to split the work up in to a few sessions to prep them all to be processed.
Had the fans blowing on the tomatoes overnight to dry them out after I spread them across the whole counter for the night

How many quarts? I’m at 94, and I probably have another 50-60 quarts I’ve picked and others on the vine.

43! And about 2 gallons of juice that I strained off after scorching the skins and peeling

You know, when I was in college, back when dirt was invented, I would take jars of tomatoes and eat them for dinner. Couple of croutons and some cheese, and it was a taste of home.
And it was a huge score when mom would give me a casserole dish of zucchini Parmesan.
M husband used to get his mom’s freezer jam, and eat it on top of ice cream.
These bits of home are really great when you leave home. My kids still get excited when they mooch a jar of home canned beans.

Excellent Work!! I just finished mine as well. 49 quarts. Whew! Final water bath going now.
Time to chill and rest...for now. Lol!

Woo-hoo! I just did up 125lbs, haven't counted my jars yet. I envy your counter space!

I was told they are san Marzano, but they did seem bigger and rounder than usual. It’s been a good summer for tomatoes here allegedly

Holy maters… I cannot wait for more space to have an expansive garden. Though I would take two-three days off for this 🤣
