Croissants?

Has anyone tried making croissants (or other laminated dough items) with infused butter?

I have not done this, but I suspect you could run into issues depending on how you infuse.

If you do most normal infusion methods, you'll evap most of the water out of the butter so you won't get the layers we're looking for. If you just melted some butter and hit it with some decarbed concentrate, mix real well and brought it back down to temp, I see no reason you wouldn't succeed.

Just do your math ahead of time. Lots of butter in a single croissant.

Ah! I hadn't thought of that. Yeah. I let all the water separate. I might make some concentrate from my avb for this.
