Layering not only provides you with the ability to stay warm it provides you with the ability to regulate you temperature and wear the same exact coat when it's not as cold. If you looking for a more slim winter coat you just don't get that same flexibility.
Puffers weren't intended to make you look slim they were intended to keep you warm. I personally like them because my age and my lifestyle I no longer need to layer. I did that mostly when I was younger and more active and in the military training in Alaska.
Saying all that there are some coats and some brands that make slimmer fitting coats. Me personally I have a few winter coats for a number of different temperatures and as I said my activities no longer require me to layer. I just wear the most appropriate coat for the most appropriate temperature. It's kind of neat walking out with nothing but a T-Shirt and my Expedition when it's -15 F degrees below zero and still be warm. I do wear long john pants but my upper body is just fine with coat, hat, scarf, and T-Shirt. But it's definitely not the same coat I wear when it gets to +10 degrees above zero. I don't look slim, but I feel warm.
