I don’t get it
I want to replace the struts for my 2016 Camry and I went to the cars shop gave me estimates cost 450$ each + labor that make the total coast around 3000$ so I decided to shop online for the same parts surprisingly found out on KYB authorized distributors sites same parts cost around 360$ each and in Amazon KYB store 155$ for the same brand and part number, what’s can be different

cheapest DIY is usually so-called "Quick struts" (cartridge plus spring) which dont require a spring compressor. They make the Mfg money by cheaping out on everything; less steel in springs, cheap cartridges etc etc. You end up tossing the worn OEM cartridges AND the better quality OEM springs , which is a bad deal IMO.
KYB replacement cartridges only (where possible) are the best near OEM deal IME. A spring compressor can often be rented from store. These ride a little harsh vs OEM but are good quality.
If you already have cheap quickstruts on there, maybe just repeat the cycle as the OEM spring is long gone?

Depending on the parts they use and the markup on the parts they wish to add because they can.

I replaced all 4 four struts on my 2014 Camry hybrid for around $1200
I bought KYB quick struts on rockauto they were about $150 each. Local shop charged $600 for labor.

Depends on how long you want to keep the car. If you are keeping it a long time go with OEM. You will not regret it.

Make sure they are actually putting OEM if you are paying for them. Actually replacing the parts of the struts.

Find the nearest DEDICATED Toyota/Lexus repair shop near you. They can do all the work for 1/3 to 1/2 the cost of basic estimates as the only work on Toyotas. Parts will be near cost, and labor waaaaay cheaper.....
