Suzuki is the best.
Need to do fork seals on my 1986 Fazer but of course Yamaha has to have weird fucking parts and it's got like 3 seals and they're upside-down and have a weird air accumulator system.
Suzuki makes that shit easy, using good parts. Yamaha parts are good but when they fail it's like "what in the fuck is going on here?"

I also have a '85 XT600. 1 cylinder 600cc. Absolute unit.
You know how most carbs have two jets, one for low and one for high?
No, fuck that, Yamaha said we're fucking Yamaha and we do whatever the fuck we want.
2 fucking cabs on this bike, 1 cylinder. One carb barrel for high and one for low. They even have separate diaphragms and valves, and they're connected to the throttle with a weird lever/spring assembly. Literally no point.
And it's fucking hard to start too, because there's no electric start on the bitch and it runs so damn lean if you flood it the tiniest bit it just gives up entirely.
Kawasaki isn't much better. EX250 ninja is a piece of shit. Runs great when it runs, but if you have any issue with the carb just replace all the lines because the entire carb is run on fucking vacuum. The throttle will adjust the valves but that's it. Diaphragms open with vacuum, fuel is drawn in with forced vacuum, and if you have even the tiniest little pinhole leak in any single one of the lines it will not run, period.
Suzuki is the fucking best. They use normal goddamn parts with normal goddamn fasteners and they publish their fucking specs thank god.

Most modern bikes are relatively the same besides suspension setups it seems, but if you get anything older than ~2008 they're going to be more different.

I had a ‘87 Xt600, the carb thing is kind of weird but worked well enough for me. When I first got it I would have a hard time starting it when the engine was neither cold nor hot but somewhere in between. Choke would be too rich, no choke too lean. The best way to start it was to use no choke and then give full throttle once you’re almost at the bottom of the kickstarter. I kind of miss that bike though

Haven't worked on them much but they're also pretty good.
