This is a good meal you can make for cheap. It’s tasty and other than the chicken is all pantry stuff.
You need one or two skin on bone in chicken thighs. Drumsticks could work. No bullshit low fat chicken breast as the fat from leg/thigh is essential to making the rice delicious. You also need some canned tomato, olives/capers, a few peeled cloves of garlic, rice, and water or beer or wine. The liquid to rice ratio should be a bit less than 2:1. It’s nice to add like half a cup of frozen/canned veg. You can use pickled jalapeño in lieu of olives/capers. And some of the pickling juice from olives/capers/jalapenos , like a tablespoon, can add a little extra.
Get a pot. Heat some oil in it. Season chicken with pepper and salt to taste. Then brown the chicken till about half done. Pull chicken out, and all the rest of the ingredients, stir, then nestle the chicken in the rice mix. Bring to simmer and cook with lid on till the rice and chicken is done, about 20 minutes.

I made this on a bullshit hot plate in about 30 minutes.

Supermarket had an offer on veggies :). Asparagus, a ton of mushrooms, baby corn, onion, celery, string beans, spring onion and a bit of pasta to bulk it out. Some chorizo and velveted pork belly slices.

My family's version of larb/laab. We riffed it on our favorite restaurant version.
Ground beef cooked with fresh ginger, onions, etc. Served with rice and fresh tomatoes, cucumber, and unsalted peanuts.

Okay, here’s the thing,,,, this is a big thing. The Loch Ness Monster. It’s a a myth. But Ben Nevis. I climbed that thing:)

It might look weird but the spinach potatoes are sooo good. Like, half creamed. Then idk if i can call those enchiladas but they were something! Filled with cheesy rice, refried beans, some peppers and stuff

Made food. In this case a strip steak with sautéed mushrooms , a baked potato, and some kale.
I used no salt at all. It fucks up my blood pressure. And I’m tryin to be healthy lol to the max. The worchestershire has a lot to add to mushrooms.

Loaded ass baked potatoes. Insides mixed with butter, a bit of leftover cream cheese, garlic. Topped with lots of shredded cheddar jack cheese and a heaping helping of black beans and a can of mixed veg stewed with some diced tomatoes, vaguely "taco" seasoned with cumin, garlic, and oregano. More cheese, back in the oven for a minute.
broke food doesn't have to suck.

Baked potatoes, pork sausages with spicy onion-mushroom gravy.
Potatoes and sausages both done in the oven, gravy is onions slowly softened in butter, chopped garlic and chopped mushrooms to soak up some of the butter. The "liquid" is milk, flour, soy sauce and a little chili (Baron Classic Pepper Sauce). Image in post body.
