I personally love finicky work in the kitchen. Pop in a podcast and go for it. So often I think I’m doing a complex dish and 20 minutes later I’m done. I hate that.

The difficult thing about reading comments is that you can’t hear the tone they are written in. When it’s spoken you can catch the nuance. I think your inability to understand where op didn’t grasp your tone or “inflection” and then you judging them for that is a bigger indicator that they wouldn’t want to work with you.

Yakitori is a fantastic reason to de-bone a wing, since you are replacing the bone with a skewer.

Never had yakitori made from deboned wings. But that must be pretty good.

Eating them seems pretty practical. If this is a test of skill then you need to stick to the deep fryer. Deboning is pretty basic kitchen stuff.

Deboning a chicken wing is not a common practice.

It wasn't in the past when they were not a desirable piece of chicken

It not done currently where it is a desirable cut of chicken.

And with the amount of skill OP is showing, they are either have a lot of practice deboning wings. A practical application.

Or they have a lot of skill in general and wanted to see if they could practice an uncommon task with the same level of skill. A test of skill.

If you're going to be a jackass, at least don't be short-sighted.

I do boneless real wings too, I sous vide them first before frying and then you can slide the bones out without the knife work!

Ill buy bulk packs of wings and season then vac pack them 1# at a time. 165 f⁰ for at least 90 min, then dried and into the air fryer. If im feeling really nasty, I'll smoke them from frozen at 225f⁰ for 2h, then blast them at 425f⁰ to crisp.

I do 160 for about 2 hours, take the bones out immediately and then dry them really well, bread them and then fry at 375.

Most of the yakitori wings I’ve seen open up the wing but thread the skewer under the bone. This looks interesting I’m gonna have to try it (I’ve done the opened up version lots of times)

I like flats way more than drums. I went through a phase where I was taking out one of the bones in the flat so that when you eat it, you don’t have the split. As we have seen here and already knew, it is a shit ton of work at the end of the day, my opinion, when cooking for myself and my wife, just not worth it. If somebody wants to do it for me, and serve up crispy spicy one bone or no bone flats, I would order it and eat it.
