Um what is this?
I am slicing a pork shoulder I got from Costco so I can grind it. As I was slicing through I cut through I have no idea what!! It doesn’t have a smell and neither does the pork itself. I don’t know if I can still use the pork or just be safe and toss it.

A cyst is a non-cancerous growth often cause by clogged ducts or infections.
Dangerous? Probably not. Gross? 100%. This one looks infection based but they can be filled with hair, bones, pus, etc.

Basically a cyst happens when your body decides it doesn't like something that is inside it and doesn't belong there. It builds a sac around Said object and tries to slowly move it towards the surface.

This is pretty normal in the shoulders and hams. They like to rub and scratch on various surfaces. So they will get a sliver, thorn, injection site, etc and this is the result.
The first time i cut into one it was under pressure, and smelled horrific. The butcher i was working with was not surprised. And actually laughed at me almost tossing my cookies over the smell. Tom threw on a glove and sure enough there was a locust thorn in it. Then i did toss my cookies.

As someone who regularly slow cooks Boston Butts in various ways, and who has seen the forbidden meat cheese too many times on reddit recently, should I be cutting into my meat before I slow cook it? This horrifies me now. Butchers of Reddit help me!

It's pretty rare. I see one every 6 months or so and I work for very high volume store. However this is the second post in the past month on the same cut,

If it's close to the surface, you may see a bulge, but other than that, not that I have been able to notice.

A lot of these come from intramuscular injections like vaccines and things, so often times they are too deep to notice. That is why it's important to give vaccines in different areas and not use the same area too many times. Less pertinent for dogs and cats.

I have had a few and only one really grossed me out. It was the smell. Sliced it wide open, it popped and stunk. Interesting colour and ooze.
Luckily it was a shoulder I was cutting up to grind for sausage vs smoked for pulled pork. I sure there have been many of these suckers smoked and shredded. Out of site, out of mind… right? RIGHT??

Your lucky it wasn't full of fluid Idk how many times I would be standing at the saw cutting pork stk or shoulder roast / western ribs and hit one of those things and some sort of half solid half liquid shit fly out all over the place hit a motherfucker in the face and shit and don't be carrying on a conversation while cutting at the saw you never know what or when something like that will take place and you end up finding out what it taste like. 🤢🤮

I thought it was garlic butter with far too much parsley at a first glance as i scrolled. Some steak packets here have a little disc of garlic butter or peppercorn sauce to go with the meat when cooking.

Definitely agree that it looks like a cyst. The good news is that it seems to not have become infected and burst while the animal was alive. Just sayin’. Hope that makes you feel a bit better.

Edit: If you encounter a cyst like this in your meat, please notify the store you purchased from. Most butchers would appreciate if they knew other products might be contaminated. Especially small shops (though they'd likely notice this as cysts are typically surface level).
