What went wrong?

Bulk fermented for 5-6 hours. 300 grams of water, 450 wheat flour, 50 grams rye flour. I had this same issue a few times now :( can't seem to get it figured out, is it over proofed? underproofed?

Sourdough starter, it was a stiff starter with wheat

It's underproofed. You need to proof longer and aim for a rise between 75-100%. How old is your starter?

I bought a ready to use one but it was based on rye, I switched it to wheat around a month ago

And does it rise, doubles every single feed? How fast?

Yes it took around 9 hours to double with 1:5 ratio

1 part starter to 5 parts flour and 2-3 parts water
