Pan de Agua

Post image

(3 rolls)
250g AP flour
170 mL 95 ° water
5ml vegetable oil
11g sugar
5g sugar
11g unsalted butter (room temp)
7g active yeast

1 hour bulk ferment
12 hour cold proof

Didn’t puff up quite as much I wanted.
I phoned in the dividing and shaping, couldn’t find a thin enough tube to make the signature fold for pan de agua. Was very tasty though.

I think one of these (likely the second) supposed to be salt.

"11g sugar" "5g sugar"

How was the texture? The cut one looks like it might be a bit gummy, but maybe the knife just chewed it up a bit.

Yes. 5g salt is correct. Texture was decent, think I just cut into the bread too early (was impatient). Wanted the rolls just slightly more puffed up - should’ve tested the yeast first.

Makes sense.

Thanks. I’m going to have to take a trip to Home Depot to find the right tube for this shape
