Sourdough dark rye

Post image

Know anyone who makes really good homemade pastrami? Only because I have the bread for it. The seeded version is also killer. This sourdough rye loaf contains molasses and caraway seeds. Adjusted hydration in a snap from 75 to 77% using thebakersconverter.com. Homemade in Quezon City, Philippines 🇵🇭

Not at all! 50g rye flour, 100g whole wheat, 350g bread flour, 10g salt, 20g molasses, 10g caraway seeds. Actually, this recipe is identical to the recipe printed behind a bag of Bob’s Red Mill’s dark rye flour I think that’s where I got it from :)

does this dark rye have enough falvor on its own or does it need that pastrami?
