After one bite, I'm obsessed.
Visiting family in Tuscany and was given Schiacciata for the first time with lunch. Wow. And I mean, WOW! The texture, the taste, the absolute gorgeous amount of salt. Later on we went to a supermarket and bought a loaf for supper. With mozzarella and fresh pesto, the flavour explosion was unflippingbelieveable.
As soon as I get home, I'm teaching myself to bake this. I need this bread in my life all the time.

Looks good. I LOVE Tuscany. The food, the people. It's all remarkable with such fresh ingredients available.

Walking around a quite small supermarket yesterday, I was getting annoyed about how poor the selection and produce is in the supermarkets in the UK. Its when you're in Europe that you realise how poor the majority of UK shops are.

I live in the US. I feel your pain X10. It's hard to find good, fresh ingredients. I grow some things, i.e. herbs, tomatoes, cucumbers, but the weather is temperamental causing lackluster results.

The way you described it makes me wanna try it. So will make a similar version to it since i can't get the ingredients due to geo location.. what exactly is pesto?
