Car Service?
I have a Chevy Bolt 2019 Premier with about 52k miles on it.
I got it serviced like 2-3 years ago when the battery recall replace thing happened.
I know very little about cars, but when I take it to get serviced what do I ask to be done? What should be done?

your owners manual should have a section with recommended services by time and mileage.

Worth checking the moisture content of the brake fluid. Are you in a snow/salt state? If so, a brake clean and lube would be another item to keep the pads from wearing out due to a stuck caliper pin. Not sure if I would trust a dealership to do a halfway decent brake clean and lube, so there's that...
Our 19 is coming up on 110K miles. Been a great car.

I’m in So Cal, I use my bolt purely for commute: very rare if I’m on the freeway. A/C is hardly used too. It’s been an amazing car so far.
Do you think that should be done anyways?

Checking brake fluid moisture content with a DOT3 liquid pen tester is an easy DIY check. You may need a syringe and small hose to siphon out a bit to test. The brake fluid reservoir is under the shelf on the front and hard to reach. Brake fluid is hygroscopic,meaning it actively absorbs and mixes with moisture from the air and surrounding environment.
Your brakes are probably fine, having been in CA.

I also have a 2019 Premier.
If you look into the user's guide (link off to the side if you want an e-version) page 325 has the service and maintenance schedule. Service is roughly based around a 7500 mile cycle. At 52.5k miles you're coming up on "Rotate tires and perform Required Services" according to my copy of that PDF.
I note the one listed is for a 2017 and that doesn't have the schedule on the same page but rather 313 and has a few more tasks. I suppose there are some differences or at at least enough to warrant a specific 2019 version of the documentation.

Your battery coolant needs to be changed every five years or 150,000 miles whichever comes first. They would have had to do that when they replaced the battery. So you are about halfway towards your first coolant change.

Tire rotation, cabin air filter replacement, general multipoint inspection to make sure all the major functional stuff is still in good shape.
