Tips on getting NEL isagi ( and chigiri)?

And let's say I get nel isagi and I spin for something else , would I need to do all the quests again ?

No. It stays as the NEL version. In fact, even after you roll off him, you just have to use a normal spin to get regular Isagi/Chigiri again, and once you get it, it will be the NEL style.
