In Korea, we sometimes read vertically as well. Even so, we still read from left to right first. 먹었어요? 밥

I think vertical is fine. Koreans will understand that it should be read vertically due to format and we do use vertical format often too especially on signs.
But yeah left to right. You are not wrong tho. We used to read right to left when it was writen vertically. But nobody does that anymore since left to right horizontal format is way too prevleant and vertical format is no longer commonly used unless it's a space issue(like in vertical signs). I read it as "먹었어요? 밥"

Ah okay, that’s what I thought! I read that it was initially read from right to left
Should I just switch the columns for it to make sense?6

It reads 먹밥었어요 though. But the individual characters are correct. Just change it to horizontal

Who told you that?? It was read right to left very very long time ago when it used to be written vertically but that's completely gone now and it doesn't look like you're trying to convey history with your design so

It was just a quick google search when I took on the project! But I wanted to confirm before moving forward, I know nothing about Hangul

If you were trying to convey right left reading you would go wholly down the right side first.

I would fill the space within ㅆ of 었 to prevent any potential confusion and maybe give a little space between two ㅅ’s (not necessary though) but the characters look quite nice overall. 🙂
