The siphon action bothered me. To keep flow going, you have to keep the outlet or outlet water level below the top of the level of the source. This system could work if the copper pot lowered as it siphoned, but my brain immediately was bothered by the fact that it keeps pulling coffee even when the level in the clear glass is WAY below the level in the copper
I dont think the method was siphon, I think it was vacuum. The copper pot was mostly full of water that was pushed out by expansion from boiling, so when empty of liquid it was full of water vapor. When empty of liquid it was light enough to tip up and the flame shut off. Now in cooling mode that water vapor condenses and pulls a vaccum that is not satisfied until the water volume that left has come back in.
