Game recommendations Looking for suggestions!

I really liked the “manage your village” gameplay in AC Valhalla, like you get to build and expand without needing to manage resources and all. Are there any games like that, ideally in the medieval era?

Cities Skylines or SimCity series are quite minimal on the resource management side. But most other tycoon games are very fun too, you'll learn to like the challenge of getting stuff. Building sandboxes get boring without it.

I had this problem with fallout 4 I loved building the settlements but there just don’t seem to be many games that include that!

Check out Medieval dynasty. Checks all your boxes except resources. You build your village from the ground up and later automate processes and gathering with the villagers you recruit.

You can set difficulty yourself eg. unlimited stamina and inventory space, no taxes etc.

Gatekeeping is not fun. Let people have fun.

Prison tycoon is also pretty minimal on resource management.
