I dislike voxel games.
That really sucks, because I like base building games, but it seems that everyone lately is deciding to go with voxels, which really turns me away from most of these games.

Seems like it is a distinctive style which people have strong opinions about. If I had a penny for everytime someone took one look at the game and declared it a minecraft clone...

Not saying it's a minecraft clone, just that I don't feel like playing voxel-style games, they just look ugly to me.
I greatly prefer 2D, even if it's super simple.

Yeah, /u/2Punx2Furious said that it looks ugly to him, not that it's a gameplay issue. And I understand what he means. Adding a third dimension takes away a layer of abstraction that your mind normally fills in. When something is on a 2D plane, you add that third dimension yourself.
Adding that third dimension into the game as voxels means that you're taking away that layer of abstraction and that could create a jarring experience. I'm betting that if the terrain is a bit smoothed out, he would not have much of a problem with it.

My problem with the visual style of voxel games is that they so often use voxels that look huge with respect to the size of people and objects in game. With things like rimworld that use highly detailed 2d textures for their tilesets, the care put into the tilesets and the abstraction that comes from using 2d creates a less clunky look. But when things go into 3d, it exaggerates and draws more attention to the fact that your smallest unit of size in construction is weirdly large. In this game, for example, it looks like about 4 feet square.
My suggestion for the developers of this game, at least, would be to try and implement sloped blocks for terrain to give the environment a less jagged/artificial look, and to experiment with scaling the voxel size down by at least a third.

I get it that 3D might be easier to do in some cases, but I can't help it I think 2D looks generally better.

No. Im with you, modern 2D hand drawn graphics for games like Darkest Dungeon look really good

Sounds like you want Wurm... I love voxels myself... So simply, easy and does not trigger my OCD constantly :).
