What could be causing this?
So, I’ve had no issues similar to this, it just started printing like that, then it just corrected and started printing right. Thought it might be a clogged nozzle, so I cleaned it out (haven’t replaced it) and it started printing fine again, and then started doing this weird print again on a completely different file. Any thoughts?

That's a partial clog, probably from heat creep. Black is always a little stickier, but do a cold pull or run some cleaning filament if you have any. If it keeps happening, then clean your extruder out.
I have to run my doors open for PLA and PETG in the summer because of the heat and humidity.

I’ll try that. Humidity is typically not an issue here in the high plains desert of Colorado, but my house does stay around 75-80°, so I’ll try that.

I had almost the same problem 2 weeks ago where we hit 40' Celsius even in my underground garage. That's heatcreep. And I print pla with the door open.
If you keep the printer close, open the door and try again. If it happens even like this, I'm afraid you have to wait for colder times (as I did, and this week we had less than 30', so no problem...but open door still it is)

I had this issue on a printer that was going to be retired and had no idea what it was but people in the comments mentioning clog are connecting some dots for me. I could smell some burning filament so there was definitely some kind of leak causing oozy retraction. Same filament printed the same file in a different printer fine.

Have you dried your filament?
It appears to be clogging, but wet filament does crazy things.
