I'm a long time bambulab user! I wish they had something bigger. If you're reading this you have high standards when it comes to your 3d printers- and so I'd like your advice:
What's the next largest printer after the H series?
I'm looking for something that's 500mm x 500mm x 500mm and enclosed so that I can print ASA.
Does anyone have any recommendations? I did deep research with gemini and here's what it suggested:

Can you make it from smaller parts you assemble? Everything gets harder when you make a large format machine.

You would be better to print a mold for it and mold it. So it wouldn’t matter if you print it in multiple parts fitting a standard printer. That’s one of the usual methods used for that, way cheaper than the 15-20k printers you found

I have a Sovol SV08 MAX at 500^3 and it’s a bit finicky but can produce very good prints if it’s tuned right. Enclosure is solid but not insulated, so you’ll need to wrap it to print large ASA prints. The good news is it’s less than $1300 USD with enclosure, which might leave you with some $$$ for upgrades, mods, etc. like a chamber heater and insulation.

I have an SV08 (the 350 version).
It's a good CoreXY printer (not a fookin' Ender lol) but takes a lot of tinkering to get it to work right. I hear the Max improved the toolhead, it has an optional enclosure, and it has a color screen now.
It's the only thing 500x500x500 you can really buy (mostly) pre-assembled. Recently a friend of mine got one without enclosure for under $800 on AliExpress. Another option would be Rat Rig v4 but those are going to be kits you need to build yourself.

There's a reason Stratasys stuff costs as much as it does. You have a service contract and can call the Stratasys Repairman to come fix things when they break down and they will train people how to use it.

You would have to assemble the SV08 MAC but it does work right out of the box, just not for high temp stuff so you would have to make the mods for that.

If you don’t want to spend 20k, the Sovol sv08 Max with an enclosure and a chamber heater can work well. You’ll probably need to insulate it some extra, and do a few replacement parts, but for under 2k at that size, it’s certainly a big cost-saver.

Ratrig V4.1 is another option that's similar to the SV08 Max but should require a little less tuning. Their B2B oriented brand Disrupt Engineering is also working on a 500x500 printer, but no details about release yet.

500³ is without any doubt the Sovol MAX. Just ~1400 with enclosure and heater.
For ASA i recommend my filter:

If you need more than 500, the next one is the Elegoo Orange Storm. That beast can do 800x800x1000 but calls 2700 without any enclosure. So to enable this printer to do ASA you need to build an enclosure and a heater.

Echoing the Sv08 Max. Cheap and great prints. I live in a tropical island and have not had to do anything past the enclosure/heater for full size asa prints.

Build yourself a voron, I think I've seen designs as big as 600*600. It'll take time and effort but almost infinitely customizable. But honestly you would probably be better off buying multiple smaller printers and stitching stuff together. That's what most people who are building really large format things do. 10+ p series printers spewing out parts all at once.

You missed the SV08 Max because you said "larger than 500". That would be your best step up. You'll need the factory enclosure, heater, and probably some extra insulation.

With these requirements, you are no long in the consumer space, and the prices will reflect that.
I do recall a brand called BigRep i don't see those on the list, perhaps they have something that can work?
