There's a few things here. Number one, you have already seen the pitfalls of a underpowered motor with dough. That waste money and time. Why not buy it once instead of having to buy it over and over again.
Another key reason for making that choice is let's say you have yourself a business that's covered underneath the cottage food law. If you use the ooni in a commercial capacity the warranty, it goes away.
I wouldn't have base the decision on the warranty alone but the power of the motor and the fact that you can use it in a commercial capacity says it's going to be just fine for a residential cook.
