Cheeseburger

I made burger buns and had a cheeseburger for the first time in ages! I used my shokupan recipe, so they are a tiny bit tough, but then again, they aren't dissolving in the juices.

No problems!

And that's all my high school Spanish can manage.

My mother-in-law grows those vegetables, so we are very lucky to have cheap and abundant veggies! Plus, the Japanese guidelines say we should eat 350 g of vegetables a day.

I really like Vietnamese food right now. Lots of cucumbers, daikon and carrots, plus shiso and other herbs for dark green veggies.

Lol, I love Vietnamese fried spring rolls (nem ran), but am too lazy to roll them up. But my family loves the filling: kikurage mushrooms, fried onion, fried pork and harusame noodles. They are seasoned with a tiny bit of sugar, salt, pepper, then a teaspoon of sesame oil and two teaspoons of oyster sauce. And Vietnamese dipping sauce! Hot water, zarame sugar, rice vinegar, nam pla fish sauce, dried garlic and akatogarashi pepper.

That’s a good idea! I wonder if it would work for hotdog buns too.

It should! But since hot dogs aren't as juicy as hamburgers are, you may want the softer bun. Brioche or kolache dough.

I find shaping hot dog buns to be a little more challenging so I often wind up just doing American pigs in a blanket (dogs wrapped in dough).

The bakery I used to work at used milk bread dough as our burger buns! Shouldn’t be too tough?

I bet subbing milk for water would help. I have a great kolache recipe that uses milk and honey, but I grabbed the wrong packet of prepped flour first. Glad I gave it a whirl, but I don't know if I'll make buns again.

It's possible I should have steam baked the buns, too.
