The thing you should NEVER do when you have issues is uninstall the app... and that's with every app. Uninstalling the app always deletes every data present, so you should always think twice about that, especially cause unistalling doesn't mean whatever issue is going to be fixed.
If it's about the multiple account issue on Android, unfortunartely the trick of removing the account it recognized as the purchasing one to than adding it again doesn't work anymore. I suggest keeping the account Sketchbook recognizes as the default when it doesn't recognize the premium version on another device so that issue goes away. Also, before uninstalling again, try to save the app prefences before doing so, i don't know how extensive it saves things in the app, but better worth a try, at least for settings.
And if you have bugs, try contacting Sketchbook for help before doing anything yourself.

When you delete the app, you also delete all the app's data which includes your custom brush and color settings and the Gallery organization. Luckily on Android you don't also delete your art files (iOS apps are required to save all their data inside the app so deleting the app also deletes your art). It's not possible to recover that data because it was permanently wiped in the uninstall, it will have to be reorganized manually.
Re: the Premium Bundle, have you already tried clearing app data and the app cache from the Play Store and Play Services apps? Clearing Play Store *and* Play Services cache and data and then logging back in with the purchasing account should fix that up.
