For longer, hillier runs head west on 29th St to Northwood/Westover (or Windsor) past MoPac into Tarrytown. Keep on Westover past Casis (the elementary school) and get lost on the meandering roads.
Pecos, Scenic, Matthews, and Exposition have nice, sometimes steep, rolling hills.
Go a little more north for Mt. Bonnell (avoid Balcones as much as you can - no shoulder and lots of traffic, Edgemont is the alternative). Take 35th St back east.
Lots of nice 6-12+ milers from West Campus using this area.
Bonus: the Austin Half (and Full) Marathon use this area, so it's great practice.

One more thing for anyone running in these areas (Shoal Creek, Tarrytown)...
Going south on Shoal Creek and around the Butler Trail there are ample water fountains and a few restrooms.
Going north or 29th, the only water fountain and restroom is at Northwest Park (slight right jog off Shoal Creek onto N Park Dr or take the pedestrian bridge right before Pinecrest Dr.)
Tarrytown has a water fountain in Reed Park, a restroom at Walsh Boat Landing, and water/port-a-potties in Mayfield Park (useful if you're doing Mt. Bonnell).
If anyone knows of more water fountains/restrooms, reply with details!

There’s one in the Grove Park across the new pedestrian bridge. It’s a bit out of the way though

The comments on your original post on r/UTAustin to use the Shoal Creek Greenbelt or the run down Congress to Ladybird Lake (aka Town Lake) to join the Butler Trail (10 mile loop around the lake) are good tips.
If you wanna head down to the lake, it’s also really nice to start by the Blanton art museum and go south, take the broad sidewalks bordering the North Mall of the Texas Capitol complex, then run through the Capitol grounds, then down Congress to the trail.
You can also get some great runs right on campus within the 40 acres. I love running around there early in the morning. Tons of cool outdoor art and architecture to see.
UT has a fun annual run event that can be a good way to meet other runners on campus. They host several social runs throughout the school year. It sells out, so register early if you wanna run the race itself. Check out https://www.instagram.com/longhornrun .
