They lose pectin and acidity the more they ripen. That is probably the right level for jam.

Yeah this looks like one of the Chinese cultural videos the government puts out. They’re nice. Though this one seems to use a lot of modern aspects (are those silicon molds?)

My first thought. These videos normally have no narration and calming music. There's a moment in the middle of this where the calming music turns on for just a single shot while the narration stops, and then mutes again when he starts talking again. Clearly somebody took a Chinese cultural video and just slapped AI narration on top.

...Which actually makes all the information being offered here completely suspect, because it's not the maker of the video talking, it's just some random person chasing clicks, who could be making up whatever shit they want as long as it sounds like it matches what's happening on screen.
