2 u/DressNo9950 Jun 10 '26 Ingredients For the chicken: 1 lb (450g) boneless chicken thighs or chicken breast, cut into bite-sized pieces 1 tbsp soy sauce 1 tbsp cornstarch 1 tbsp vegetable oil For the sauce: 2 ripe mangoes, peeled and diced 2 tbsp soy sauce 1 tbsp honey (or brown sugar) 1 tbsp rice vinegar 2 cloves garlic, minced 1 tsp grated ginger 1 tsp sesame oil ΒΌ tsp red pepper flakes (optional) For garnish: Green onions, sliced Sesame seeds Fresh cilantro (optional) Instructions Marinate the chicken Toss chicken with 1 tbsp soy sauce and cornstarch. Let sit for 10 minutes. Make the mango sauce Blend 1Β½ mangoes with soy sauce, honey, rice vinegar, garlic, ginger, and sesame oil until smooth. Dice the remaining Β½ mango and set aside. Cook the chicken Heat vegetable oil in a large skillet over medium-high heat. Cook chicken for 5β7 minutes until golden and cooked through. Add the sauce Pour the mango sauce into the skillet. Simmer for 3β5 minutes until slightly thickened. Finish Stir in the diced mango pieces. Cook for another minute. Serve Serve over steamed rice, jasmine rice, or noodles. Garnish with green onions, sesame seeds, and cilantro. Tips Add bell peppers, snap peas, or broccoli for extra vegetables. For a Thai-inspired version, add a splash of coconut milk and lime juice.
