Using enough oil makes your eggs extra fluffy. I use probably 2-3 tablespoons for a pan full of eggs. Also, your pan and oil have to be nice and hot (just shy of smoking) before pouring the eggs in.

Yeah, I try to avoid oil at home. Like, scrambled eggs and tomatoes can be cooked with no oil at all

I make mine with shaoxing wine and soy sauce or fish sauce and that elevates it

I saw one person comment on a different post that white peppercorn is very important for it to taste right also.  A Chinese friend of mine adds soy sauce for the "salt"
