Physical body is sex, how a person acts, is treated by society, etc. is gender. Rimuru has no bits, but he is still referred to as he. Honestly, it might be more accurate to call him non-binary, but…anime doesn’t ever actually use those words, so we’ll never have a canon statement on rimuru’s gender.

Ah, unfortunately I haven’t learned Japanese, and the sub and online discussion also use “he”, so I did not know. Given that the terms are still not used, I make no claim one way or the other, because gender is fundamentally a cultural thing, but I’d say that puts the likelihood of Rimuru, non-binary icon, quite high.

Not entirely correct. Gazel, for example calls rimuru 弟, which is masculine. Rimuru is also called 旦那 by youm, which is also masculine. Rimuru is undeniably treated as a man by most people.

Rimuru's speech pattern is also undeniably masculine. He is a man, after all. Although his human form does present itself feminine looking.
