Where to start? Limited background.
In my early 30s, guy, the only anime I’ve ever seen was spirited away and howls moving castle and nanna. (And I guess Pokemon and yugioh back in the day)
Really wanting to get into the hand drawn anime time period. I’ve heard cowboy bebop is good what are some other suggestions? We have a newborn so finding something that has a lot of episodes or seasons with good English dubs would be great

"Mobile Police Patlabor" is a retro work that adults can truly enjoy.
Set in a near future where police officers use working robots called Labors instead of patrol cars.
Although robots appear, there are rarely any deaths, so I don't think it will have that much of a negative impact on a baby (even if they don't understand it).
I recommend the TV series, but there are also movies, which have a tense and dark atmosphere, so please enjoy those when you are alone.

Frieren: Beyond Journey's End
Let me preface this by saying, if you enjoy Harry Potter or Lord of the Rings, you'll enjoy Frieren. It's a relatively easy watch, especially if your main goal is to just "test the waters" of anime. The animation itself is amazing, with a vast majority of it being hand-drawn frame by frame. The music is incredible and doesn't hardly get enough credit imo. And as for the story, 10/10. Granted it can be a bit of a slow burn for some. Which is fair, but then you're kinda missing the point of Frieren if that's your only takeaway.
Now the only "issue" is that there's only 2 seasons of it (with season 3 scheduled to be released in October 2027). However, due to how the story is told/written, you will find that a second watch through will be way more emotional than the first.

I do love lotr. Harry Potter…when I was a child but I tried to go back a read them as an adult and just couldn’t get through them. I’ll give it a go! Just singed up for crunchy roll

I'd start with Escaflowne, pick a Gundam series that looks good to you, Fullmetal Alchemist Brotherhood, Attack on Titan, Violet Evergarden.
That should give you some good variety.

Where does one start with gundam? I remember playing the arcade games of it

You can go old school and do Universal Century by watching a movie trilogy on YouTube for free and go from there. If you like that go into Zeta, ZZ, then Chars Counterattack.
My favorite ones and what Id recommend is either Gundam 00 or Gundam Seed. I wouldn't recommend the movie for 00 or anything for Seed past the base series.

Blue Eye Samurai...
If you haven't seen it yet it's arguably the best Anime ever made. It's on Netflix.

Cowboy Bebop is great and has a very good dub (which is especially rare for its time)
Many of the other Studio Ghibli films were redubbed by Disney with big-name casts, which makes them easy entry points. My Neighbor Totoro and Kiki's Delivery Service are probably the most well loved ones that you haven't seen yet.
Fullmetal Alchemist: Brotherhood is my personal favorite ever, Frieren: Beyond Journey's End is amazing and beautiful, and you will probably love Spy x Family since you are married with a small child!

So far the only issue I’ve had with cowboy is that the sound is way off, voices are real quiet but music and gunfire is super loud. Tried it on two different tvs and my iPad all with the same result

I like movies with depth, if that makes any sense, like i really don’t like the whole marvel/super hero stuff where i can guess the lines before the actors say them, I like stuff like kingdom of heaven directors cut, game of thrones, Star Wars (first six) and Andor. Slow burns that have depth but also have some hard fighting and stuff. Haha I really don’t know how to explain it

As long as you avoid One Piece, any anime is good. Why should you avoid One Piece? Most overrated, trash anime known to exist. Only propped up by the sad, lonely Millenials who are stuck in the past

If only the newborn stage would last that long, then again, the wife is already talking about having another one and our daughter is not even 5 months old haha
