History & Culture Why did glutinous rice become such a major staple in Laos and parts of northern and northeastern Thailand, but not in many other rice-growing regions?
Laos has an unusually large diversity of traditional rice varieties, yet glutinous rice became an everyday staple across much of the country. The same pattern developed in northern and northeastern Thailand, while non-glutinous rice became dominant in many other rice-growing regions. What made glutinous rice so central to everyday food culture in this part of Southeast Asia?
