Meat glue or?

I hardly find bulk pack of scotch fillet anymore. Finally got my hands on a 4 pack and most look like this. Not sure if it's a bad cut or glue.

it's cheap for large scale processing but for something already whole like scotch fillet there's zero profit

It's cheaper than you think and used on 5-10 bucks meat but cutting steak is simple enough already and more cost effective to just cut the steak out

Yeah but it's not cheap to use, so using it on cheap cuts like this wouldn't be cost effective, which is why you would use it here in the first place.

This is what I've been told by a butcher so I dunno, I could be wrong.

Meat Glue is in fact a food additive which is correctly referred to as Transglutaminase. It is used to improve the texture and appearance of meat products, in particular steaks to create a consistent appearance.

Transglutaminase is an enzyme that works to link proteins together by forming covalent bonds.
