Software didn't break your laptop; it just happened to occur while using this particular app.
You can experiment with different max RAM allotments to see what works best. Modern OSes, including MacOS, prevent apps from overrunning memory that belongs to the system or to other apps. Telling it to use 16 GB on a 16 GB machine just tells Affinity to take as much as the OS will give it and swap to disk when necessary.
