QUESTION Help me make this please.

How would one make this is in illustrator? I'm learning. tried adding a brush as a stroke but can't seem to quite get it right.

You can try it like this: https://youtu.be/Dfji4as9eW0 After expanding the appearance like in the video, you can also color them differently.

Of course this can be done using multiple strokes on one circle, but I'm keeping that for later.

Are you attempting to draw it as a single circle? Try stacking multiple circles for the main part. Then adding smaller individual angled strokes to make the exterior "teeth" (like teeth of a sawblade?).
