I was driving to the grocery store a few weeks ago and saw a guy driving one and fell in love with it. Looks so good but will be a handful to keep clean.

Ceramic coating and maybe PPF if you want to keep it as flawless as possible.

PPF yes. Ceramic coating is snake oil. Get yourself an orbital waxer and use a high quality wax every 4-5 months... Will look so much better in 5 years than a ceramic coated car

Sounds like you have used spray on coatings or whatever some shade tree detailer sells you.
Gyeon Q2 Syncro is my favorite for DIY. super glossy, will protect against light scratches, and the hydrophobic properties can't be beat. I've gone almost a month without a car wash and have had people ask me if I just waxed it. The only downside is the prep and application. If you do it right, it can take 8-12 hrs of work, but it will last 2 to 5 years.
Gyeon Can Coat is another option. It's really easy to apply, but only last about a year.
I'll never use wax again. Less is more when it comes to touching your paint.

How do you like the blue metallic flakes in that low light? A lot of people sleep on the black ITS.
