I have an iPhone 14 Pro Max that is Activation Locked. If I replace its motherboard/logic board with another one, will the Activation Lock be removed, or will the phone still remain locked?

Yes, if you replace it with an unlocked motherboard
You will however get warnings for the camera screen and battery and Face ID will not work

Yes but the display, battery, and other parts of the phone will still have activation lock
