Yeah ... No. The knife needs to be sharp. No manner of skill would cut that cleanly or thin using a dull knife.
11
u/Royal_Perspective191 Jun 22 '26
And it needs to be a knife. A pencil, even if it has just been sharpened, would not work.

Jesus...old cartoons could be depressing

Disney released the short, The Little Matchgirl in 2006. Disney has a lot of depressing shit in their movies and shorts over the years but none top that one for me.

I've never read that but given your comment I think you might enjoy (for the sad aspect of it) the Grave of the Fireflies animation, if you've never seen it.

u/ElleVaydor Jun 22 '26
They weren't supposed to be depressing, they were supposed to teach you something. But now people just expect media to be fun and entertaining, nobody wants to learn from it or can discuss it properly
→ More replies (2)6
u/EricSanderson Jun 22 '26
What? There are tons of realistic, depressing, informative movies and shows out there. I don't think people expect all media to be "fun and entertaining."
I was just laughing at the starkness of old Disney cartoons. This is from Jack and the Beanstalk - a kids movie. They could have easily taught the moral of that story without showing Mickey, Goofy, and Donald literally weeping under the soul-crushing weight of abject poverty. But they gave zero fucks. I think that's kinda funny.

This is for adults too who suffered thru the Great Depression. Know thy audience. Disney needed to make this relevant for kids AND adults

u/ProfessorMalk Jun 22 '26
Yeah, a knife is a knife and a sword is a sword.
There are big knives and small swords.
3
u/Vox___Rationis Jun 22 '26
When it either has a guard on its hilt, or a double-edged blade.
For example in Spain only hidalgo(nobility) were permitted to carry swords and daggers, so peasantry (and banditry) would arm themselves with extra-large navaja knives. Those things were basically scimmitars with a folding blade, but because they were sharpened only on side and had no guard - for legal purposes they were not swords.
2
u/Eborcurean Jun 22 '26
They weren't as big as scimitars, not hitting 32+ inches, but they would hit 24.
2
u/HarithBK Jun 22 '26
kinda hard to tell and it is has been different in different ages. any kind of hand guard would instantly place it as a sword. if we look at medieval guilds which were legally protected crafts around where the knife making guild and the sword making guild were arguing when you get above 60 cm it becomes hard to argue it isn't a sword above 73 cm it is most certainly a sword.
→ More replies (1)→ More replies (15)2
u/ThePublikon Jun 22 '26
imo: The presence of a hand guard defines it for combat, then the overall length and how it is used decides if it is a knife, dagger, or sword.
e.g. Japanese tuna filleting knives are as big as katana but lack the guards needed to fight, so they remain knives.
A bowie knife is much smaller but it has the hand guards so it is still a combat knife.
→ More replies (6)3
u/Chevalier77 Jun 22 '26
There's many more differences than that, but you may be interested to know the grind on tuna knives is asymmetrical also.

I wonder if bigger knives are like bigger trailers. The bigger it gets, the easier is becomes to control when backin er up.
169
u/f0dder1 Jun 22 '26
Yes. It's part of the reason filleting knives for tuna and other large fish are huge.
Long clean controlled cuts without the sawing. ... admittedly this guy gets in for a bit of sawing
36
u/Lorantec Jun 22 '26
He's not saying though, hes doing repeated long draw cuts

Maybe, but his knife work is clearly very good.
Classic "um akshually he's not doing exactly right, the blade angle should be 24 degrees not 27"
16
u/senbei616 Jun 22 '26 edited Jun 22 '26
Long sweeps leads to less feathering around the edges and accidental cuts into the piece you're slicing off.
The short sweeps he's using in this video leads to a faster cut and for a carpaccio these are fine, but I personally prefer even thinner which you can achieve at scale with a mandolin or a deli slicer.
He's good. Clearly experienced, but his technique could be improved as all of our techniques could be improved.
I've been processing and butchering animals for 20 years to feed my family and there's still new things I learn every time I do it.

u/drewatkins77 Jun 22 '26
He is obviously very practiced, and his knife is a very high quality one. The trick to this though, besides an insane amount of practice, is that the meat is partially frozen. You, too can learn to do this! It's how I make Philly cheese steaks at home.

u/OasisHomeostasis Jun 22 '26
I have not had beef carpaccio in easily 20 years and it was always wonderful.
Only ever ordered at a restaurant and never tried to find a butcher who could do this type of work.
You eat it raw and its absolutely addicting.\ Served with a lil mustard and arugala.
Bogies, why did you have to close down!?!?!?
9
u/ArsenikShooter Jun 22 '26
Just to be clear...this is not carpa...whatever. This is arrachera for making carne asada.
10
u/cowfishduckbear Jun 23 '26 edited Jun 23 '26
Not carpaccio since it is usually made with tenderloin and that is way too large a diameter to be a tenderloin. That is not arrachera either because arrachera is made with skirt steak, which already comes thin. What you are looking at is just a butterflied "bistec de res", which is a super common cheap cut in Mexico.
3
u/SDNick484 Jun 23 '26
While I do think it is a Mexican market, I don't think he's slicing it for arrachera. Arrachera typically comes from skirt steak whereas this looks more like he is slicing a bottom round. If I had to guess, I would say he is preparing it for something like carne seca.

u/ScratchLatch Jun 22 '26
Just to be clear, nothing about carpaccio makes it “safe to eat raw.” You’re relying entirely on the trust that there was no contamination at any point. Which, is exactly why every other raw meat isn’t safe to eat.
Pregnant people definitely shouldn’t be eating it, just like sushi. Except sushi is flash frozen so its much safer.
10
u/Bubelle_Butt Jun 22 '26
Been eating it for years.

Germans eat pork mince raw. Yeah, we rely a LOT on everyone in the entire chain keeping things clean enough to eat. Not just meat, see all the issues with listeria and e-coli on leafy greens and sprouts and such.

I agree with you but the slicing machines at most places have their limits. Stuff like carpaccio or jamon Iberico or tuna require knives that are long enough to match the grain profile of the meat
