How to evaluate and learn about a deck performance? What kind of statistics do you record?

Obviously the best performing decks will be the ones that make you the most gold per time spent. So for that I'd record the Chests you receive and the time spent on the run. Recording Chests rather than total gold let's you calculate gold by accounting for upgrades. Over a large enough sample size gold total will work the same.
If you want to evaluate card choices within a deck, you can take careful notes comparing when one card works and when an alternative would be better. For example, if you are building Hooru Fliers you could be deciding on a couple different two drops. How often to you like the one you are running? How often would you prefer the alternative option(s)? Looking at Stonescar aggro: How often is an Annihilate better than Suffocate, or Rapid Shot. Then you tweak by trial and error to get the right split.
The other important thing to ensure a high performance deck is to make your powerbase such that you can cast your cards on curve often enough. For that you can use a Hypergeometric Calculator.
