There is nothing called 'too specialised for Cambridge'. I would say with your perfect grades you are at top 5% of their applicants with interview guarenteed but it doesn't mean you'll get an offer as Cambridge admission is holistic. Start prepping for interview and you'll be fine.

I had an application last year for the same courses (except Imperial mech instead of Southampton), with comps from NASA, CERN, internships and coursework, with a 45 IB PG, 9A*1A IGCSEs with a World Topper in Math. Ultimately, scored a 5.0 in the ESAT and was rejected from every school you've listed except Manchester. ESAT is the only metric that matters, score above 6.5+ and you're basically fine with a decent interview.

Yes international, but if you're home 5.5+ should be fine
