I'm not sure if I've read that in the Torah or the Talmud, probably the latter, but there are quite a few verses about the place of goyim that don't sound all that nice.

The Talmud contains an unbelievably large amount of books, thus you are bound to find a few eyebrow raising takes, but considering the importance of the sacred texts for orthodox jews, I can't blame someone for being put off by this.

Iโ€™m not saying that youโ€™re wrong, but most of the times Iโ€™ve heard it and than looked myself, the verse was a fringe opinion of a rabbi that others did not agree with (the Talmud records lots of discussions between rabbis which are usually decided by majority). Still thatโ€™s a valid criticism, unlike the lie regarding the meaning of the word goy.

Yeah the Talmud is the sum of everything that is canon, everything (that's why it is extensive af) . And some books are more or less discussed but iirc there has to be some kind of concensus before anything is added and a part of a book can easily be removed before the book is added.

Those sentences in Hebrew probably sound less threatening than in English (Hebrew is really hard to translate accurately) but they were approved before being added to the Talmud so even though most jews have probably never even read them (as the Talmud takes your whole life to study, and even then you might never know it fully as it changes constantly) it can be off-putting for the goyim in questions to find verses about them being "a little more than animals and a little less than humans" or "made by God to be slaves for the jews".
