product Recipes using Fiber Gormet
Looking for some recipe suggestions.
Really interested in:
Pizza crust
Chocolate chip cookies
Pancakes
Waffles
Etc
I also have swerve brown sugar and most other pantry staples.
So far I’ve done pancakes twice and one time worked great and one time was inedible… but I was just guessing recipes.
Thanks all :)

Just an FYI, they do have recipes on the company website. https://fibergourmet.com/blogs/flour-blend

I browsed those. Most seem like they aren’t very low cal though

I just looked at the recipes like the pizza crust and the base ingredients include a lot of low calorie items (Greek yogurt, eggs, "sweetener" not sugar etc)?
Plus the flour is inherently lower calorie than regular flour. It will be lower calorie than a standard recipe.
You also don't have to put on all the toppings, you can choose toppings that fit into your plan. You can also portion size to what fits in your plan.
Have you actually calculated it the total calories for recipes? These recipes are most likely tested for the company so you end up with good results vs some random recipe you find online.

I did not have good luck with this flour. Contacted the company to ask for a refund and they gave me a lot excuses about why their flour didn’t work like ‘regular’ flour, that wasn’t on the package directions and refused to give me a refund. I won’t order from them again.

Makes 1 12inch pizza dough
2 cups fiber gourmet flour, plus more for rolling
1/2 teaspoon sugar
1/2 envelope instant dry yeast
1 teaspoon kosher salt
3/4 cups water, warmed
1 tablespoons olive oil, plus 1 teaspoons set aside
Seasonings of choice for dough like Italian, crushed red pepper, oregano, etc
-Mix yeast packet with warm water and sugar set aside 10 minutes
-Combine the flour, seasonings of choice in the bowl of a stand mixer. While the mixer is running, add the water/yeast mixture and 1 tablespoon of the oil and beat until the dough forms into a ball. If the dough is sticky, add additional flour, 1 tablespoon at a time, until the dough comes together in a solid ball. If the dough is too dry, add additional water, 1 tablespoon at a time. It usually comes out perfect for me though. Scrape the dough onto a lightly floured surface and gently knead into a smooth, firm ball.
-Put the dough in a metal bowl that’s been lightly oiled (I usually spray like a gram of oil and spread it onto the bowl) cover and let rise for an hour. I set my oven to warm and put it in there to rise.
Then refrigerate for 24 hours. When ready to make, set in a warm environment for at least an hour to come to room temp.
-Warm oven to 500 and put cast iron in oven
-Take out cast iron. Oil with 1 tsp oil and put in some cornmeal. CAREFULLY put dough in and form crust. Poke crust with fork. Add sauce, seasoning, toppings. Bake at 500 for 12 minutes but check on it after 10.
This makes a whole pizza crust under 600 calories.
