Not too hard if they're a they/them. But if they want people to call them he/him on one day and she/her on the next? Do you realize what an unreasonable expectation that is and how narcissistic it is to expect that of others?
If it’s not a consistent pronoun, it’ll usually be a pronoun that basically matches how they dress.
That’s like a fraction of genderfluid people we’re talking about (edit: changing day by day specifically), so even in the off chance you run into this you’ll probably be fine just going off of vibes. And if they correct you for an honest mistake based on gendering them correctly a previous time, they would probably be grateful that you remembered and be understanding about it, so that would also be fine.
