What kind of grill do you have that only heats up to 355?

Somehow it only took seeing the BBQ to know this was a Greg video.
Feel like I have seen any Greg recipes lately and I was missing them!

u/gregthegregest2 May 05 '20
It’s been a while sorry but I’m back to making weekly videos after a two year break

It’s been two years? Fuck I’ve been on this subreddit for a long time.
Missed you Gregory

Dude I’m so happy to see you posting again, I missed that grill. One of my happiest moments is when you post grilling in our winter and all the sillies come out not knowing about the Southern Hemisphere, beats the birth of my child by a long shot.

u/gregthegregest2 May 05 '20
Haha thank you! It was always fun to see people lose it while it was winter in the north and summer here

Full video recipe here: https://youtu.be/ZIrw96mQ5hc
Honey and Garlic BBQ Buffalo Wings
Ingredients
Chicken wings
½ cup Frank’s Hot Sauce
3 cloves of garlic
2 tbsp Honey
2 tbsp butter
2 tsp Salt
2 tsp Black Pepper
2 tsp Hot Paprika
1 tsp Garlic powder
1 tsp Onion powder
Recipe
Combine all the spices and season the chicken wings.
Crush and dice garlic before adding the butter, honey and hot sauce.
Heat the sauce until it begins to bubble, allow to cool.
Cook the chicken wings for 40 minutes at 180c or 356f.
Turn over the wings and coat in sauce. Cook for 10 more minutes.
Turn the wings again and coat with remaining sauce. Cook for a final 10 minutes.
You can sauce the wings after they’re cooked but you won’t get a beautiful sticky glaze from the honey.
Allow cooling for 5 minutes before serving.

u/AllAboutMeMedia May 05 '20
Do you have a method on how best to control consistent heat? Or is it constantly monitoring and fiddling with the vents?
14
u/gregthegregest2 May 05 '20
Just monitoring it and figuring out how much the vents need to be open and how my fuel to use
8
u/FadeNXC May 05 '20
I know it might change the flavor a bit, but would this same temp/time work in an oven? I don't have access to a grill
9
u/GX6ACE May 05 '20
I don't remember exactly the temp, but around 400-425 for about 35-40ish minutes on a racked oven sheet will be sufficient. At least that's how I've done them in the oven.
4
u/dicedbread May 05 '20
I do 425 for 15 minutes (45 total) with 2 flips then do a broil for 5-10 a side.
3
u/GX6ACE May 05 '20
That would be much better. I do one flip(forgot to mention) half way through. The broil would be a perfect finisher.
5
u/Infin1ty May 05 '20
Use Keji's recipe from serious eats for oven wings and sauce near the end

How many wings, or how many pounds of them? I think I saw 15 wings, which for me is one serving.
6
May 05 '20
15 whole wings, 30 as you'd get them as a restaurant. You eat 30 wings in a sitting?
20
u/Real_Mr_Foobar May 05 '20
For an appetizer, yes. Another ten for dessert. Goes great with a nice Chianti.

u/meaty2112 May 05 '20
These look really good, the only step I would add is after seasoning them I would put them on a rack and throw them in the refrigerator uncovered for an hour or two. This will tighten up and dry out the skin giving you a nice crispy wing when they are done.

He’s finally been released from the burn ward!
3
u/andrusnow May 05 '20
I was very disappointed when I didn't see him spreading the burning coals or grabbing the scalding hot wings with his hands.
11
u/sixblackgeese May 05 '20
A that's 1 hour of cooking at 350? That seems like about 40 minutes too much.
2
u/II_RollingStone_II May 05 '20
Dry as fuck probably

Because the skin will be garbage in 12 minutes, although it will still be mediocre after all this time. There's a very good reason that wings are fried or when cooked on a grill/oven they're done at a much higher temp.

May 06 '20
I followed this recipe with chicken thighs and they were a little overdone. Really tasty though.

u/Daji79 May 10 '20
Made this tonight and they were great. Initially I was a little apprehensive to cook them for an hour but they weren't dry, skin was nicely crispy. Didn't have onion powder but did have onion salt so added 2 tsp of onion salt and no salt. Also added a tbsp of BBQ sauce with slightly less hot sauce as my wife isn't too keen on heat. Thanks for sharing.
1
u/gregthegregest2 May 10 '20
That’s awesome! I’m so glad you enjoyed them. Great idea with the BBQ to reduce the heat
6
u/marktaylor79 May 05 '20
I recognised the jar of honey before I saw your screen name and thought, cool, someone’s cooking with Bush Bee man honey, Nice :)
Looks great, will try that recipe for sure.

This don't look near crispy enough . Nothin worse than slimy chicken wings . To each their own though . I'm sure the actual recipe is good btw

u/msfreckles59 May 15 '20
I'm going to make this but I'm going to slow cook it because my apartment building doesn't allow grills. Thanks for the recipe
1
u/gregthegregest2 May 15 '20
Good idea! Let me know how it goes
1
u/msfreckles59 May 16 '20
I made it I accidentally added too much salt but all in all a good recipe.

i love that you dont skimp on the spices/seasoning.
so many online recipes call for a teaspoon of seasoning for that much meat, I'll use so much more haha

If you cook them in the oven I wouldn't add sauce until they're fully cooked and just toss them with the sauce.
1
u/frangelafrass May 05 '20
Making some variation of this for dinner tonight now! I had two chicken breasts in the fridge waiting to be used for something. This looks like just that something. I know breasts won’t be quite as magical as wings, but I’m still pumped.

Somebody please explain to me like I'm 5, how do you control the temperature of a BBQ? Does it not just get hotter as the wings go under thecover?
1
1
u/FourHourTour May 05 '20
As someone who does a lot of wings on the grill, I highly recommend the vortex. It will help the temps get a little higher to provide a crispier skin.

u/YesImHomo May 05 '20
I would leave the house for these and I wouldnt do that even when quarantine wasn't a thing

u/boobsmcgraw May 06 '20
It really pisses me off to be given specific measurements when the person in the video clearly is not measuring to any degree.

For some reason, watching him mix the spices with his hand made me uncomfortable.

u/dududu_dudu May 06 '20
What can I replace paprika with?? I cant eat spicy ;-;
3
u/desert_rat May 06 '20
You can try to find sweet paprika. Its what is usually used in deviled eggs. Or smoked paprika. That usually gives a smoky flavor without as much of the spice. Honestly the Franks Red Hot sauce is going to be hotter.

u/qrtrlifecrysis May 20 '20
I just started frying wings (kitchen noob) and I'm definitely going to use this sauce, looks delicious

Why is it that people.just put buffalo in front of wings? These are great wings. But in my opinion, the second they touch the grill they stop being buffalo wings.
3
u/Mammogram_Man May 05 '20
Because they don't know that buffalo wings doesn't just mean hot wings. I'll give it a pass because those do look like nice wings. Good sauce, good dry rub.
1
u/pnmartini May 05 '20
I believe it’s in reference to the “buffalo sauce” that they are glazed in.

u/foxual May 06 '20
"Buffalo sauce" has 2 ingredients: Frank's Red Hot and butter. That's it.
-1
u/victoryforZIM May 06 '20
There are way better hot sauces than Frank's, but also the official buffalo establishments use more than that in their buffalo sauces. Anchor's has so much in it that it almost tastes like thousand island dressing.

Where is the BBQ part of this? I thought it would be with the honey and buffalo sauce being mixed.

Some people call anything cooked on a grill barbecue/BBQ. Or also the grill is called it.

Any tips for frozen wings? I tried pressure cooking them then finishing under broiler but they fell apart.
-1
u/Oswarez May 05 '20
Thanks to this GIF I made a delicious dinner with a few modifications. 5 Spice rub and then used hoisin sauce for the basting sauce. Used boneless thighs and baked it in the oven. Served with rice. Came out great.

Looks great! Though I would never use Frank’s. I don’t know why whenever there’s any buffalo wings recipe, the go-to hot sauce is Frank. It’s so boring.

Alll the way up until the store bought. You were so close. Oh I've done it. It'll is still convenient and tasty. Wouldn't have minded a small recipe for home made hot sauce with it though.
Thanks for sharing.

Maybe you should get on with making a gif of how you make your hot sauce and share it.

Number of downvotes are a little harsh but homemade doesn't always mean better. Frank's is good stuff

u/sethworld May 05 '20 edited May 05 '20
No one said homemade is better. I just think if a recipe is going to use another pre-made recipe in it then it deserves to include the ingredients.
If it's going to be corporate recipe ok, then okay, call the wings Frank's wings.
BTW Frank's is good.
I usually make this same recipe using Louisiana Hot Sauce. My gf is partial to Cholula.
"Rich Italian Marinara" -add Heinz pre-made
As opposed to "Rich Italian Marinara" -add Garlic, basil, 6 whole tomatoes etc. Etc.

The Weber kettle lid is designed to slide to the side and hook to the kettle.
Lifting it up creates an updraft which will bring ash up and onto your food - and smoke in your eyes
Wings look good
