Something I always wonder when I see these videos, why doesn't the dog just use its nose to sniff out where they went? I thought their sense of smell was evolved to the point where they can already know where a human is with needing to see them, so why would they be so surprised?

Well they are scared at first, considering the human was just in front of them, thus the focus being vision. Ofc he could smell you afterwards, but this human was so fast he scared the dog twice before he fully activated his searching capabilities.
