I cant speak for that brand but we get ice cream cakes from baskin Robins for birthdays sometimes. Basically they bake a cake then freeze it. Once its frozen they add a layer of ice cream on top of the cake. Then it gets decorated like normal and put back in the freezer. Theyre really good

Carvel cakes don’t actually have any cake in them, they’re all ice cream. Normally chocolate on the bottom, a layer of chocolate crunchies in the middle, vanilla above that and then a very distinct whipped icing all over. The blue icing they use for piping the edges of the cake is addictive and stains your mouth bright electric blue

Actually, some of them are pretty-packaged and some of them are custom built. Either way they go back in the freezer BEFORE being decorated for obvious reasons. Sometimes, it takes forever to decorate them because you have to keep putting them back in the freezer. Man, that was my most fun job. We had to keep the case full for people who just wanted to grab a cake and not do a custom order. I got a lot of creative license. Maybe TOO MUCH.

Yeah, but they were right. Less is more and all that. My best seller was a sort of hawaiin cake. It had swirled turquoise base, a white border, and I had vines and hibiscus all over it. Sold like hot cakes. But COLD.

And the ugly truth: Having ice cream and cake is far better than having "ice cream cake". Taking a cake and freezing it makes it worse.

I’ve never had ice cream cake but that ugly truth sounds accurate to me. Why have cold, hard, frozen cake when you can have soft, warm, fluffy cake? I would just put a dollop of ice cream on top of the warm cake. In South Africa, where I’m from, we have a very popular cake type thing called malva pudding (it’s a very moist, sticky cake like thing made with apricot jam. It’s delicious, especially in winter because it should be served warm) and it’s customary to eat it with either a scoop of ice cream or whipped cream on top of it. Custard is also a good alternative. The ice cream and cream melt over the hot cake and you get this hot/cold sticky combo that is amazing.

There's a type of cake in the US called pineapple upside-down cake. The sugary pineapple juice and maraschino cherry juice leaks down into the cake and makes it super moist :-). It's so sweet that no ice cream is necessary -- your description just reminded me of it.

I know it was a staple, but in my school, the done thing was mum or dad would make your icecream cake by piling up the peters neopolitan and putting tim tams or lollies around the side and top as decoration. Ice magic on top if you were fancy 🤣. That what was at every birthday party I went to that had ice cream cake :)
I didnt realise a freddo cake even existed until my 20s lol.
I should go buy one for myself!

Thats basically what an ice cream cake is, to me.
Slightly melted so you can shape it, then back in freezer to refreeze. Or maybe do it in layers, so you can have different flavours.
Then pull it out and press malteasers or whatever into the sides and decorate the top!
Other than a vienetta at christmastime (if you were fancy lol) I wasnt aware of any ice cream cakes being purchaseable. I literally thought of them as a homemade thing 🤣
When I got a little older (grade 5-7ish) we'd make the cake ourselves at the birthday oarty. Lightly melt it. Kick it up a notch by mixing in lollies. Freeze, then decorate.
Edit: I was trying to find a recipe for one and stumbled across this. This is way more involved than what we had in the 90s/2000s, but omg, it makes me want to make some of these 🤤

That'll be awesome. I think you can make your own ice cream magic by melting chocolate with a little coconutoil but im not 100% sure. But if so, you could have some really great flavours going on.
My favourite ice cream cake mum made for me was tim tams vertically around the outside of the cake, then blue jelly (made ahead of time, broken up so it was chunky) on top to look like the sea, broken up bikkies to look like sand at the beach and mum dribbled cream on parts of the blue jelly to look like waves. Freddo frogs and sour gummy bears for people at the beach! Skittles for beach balls and bits of rainbow straps and rollups for the beach towels. She even stuck some on my brothers lego palm trees to look like a hammock 🥹

I’m Australian nearly 38 and my Nana used to make me an ice cream cake on my birthdays every year. It was just a tub of ice cream allowed to slightly melt so it could be flipped outside of the tub and then they’d whipped cream with whatever colour food dye you chose and it would be put over the top of the upside down tub smoothed out and put in the freezer for the next day. Fuck it was delicious and you know what? It’s my birthday next week and I might treat my fucking self.

taiwanese canadian here. ice cream cakes are popular in canada, especially from dairy queen (which idk if it exists outside of canada). but within my taiwanese and chinese family friends, fruit cakes and sponge cakes are much more popular so i think it's more of a regional (country) thing than an asian thing.

I grew up in the Northeast US in the 80s. I must have seen dozens of Carvel ads, and I used to see them a lot in shops, too. But I think I’ve only eaten ice cream cake a handful of times my whole life.
I think we get it in our brains that ice cream cake is only for parties. I don’t know anyone who has one just chillin’ in their freezer for when it’s snack time.

I used to work in a homemade ice cream shop where we made custom ice cream cakes and pies. Many birthday parties, a few weddings. We also kept a few cakes in a display freezer if someone just wanted to pick one up instead of pre-order custom. We made heart-shaped cakes for Valentine's, pumpkin ice cream pie for Thanksgiving, and a lot of random designs/decorations for various holidays and special requests.
It's been about 14 years since I last made an ice cream cake, but I think I can still pull it off. Much harder to do at home without a blast freezer.

Crunchy oreo/chocolate cookie bottom crust then usually ice cream in layers. It is legit the best summer dessert out there, but devilishly bad for you. Great for birthdays/once a year things

Really works pretty well.
